Chocolate Banana Bread Muffins

SNACK
Edamame and String Cheese
Ingredients:
1/2 cup Shelled Edamame
1 String Cheese
LUNCH
Fall Veggie Baked Chickpea Penne
Ingredients:
3oz Ground Turkey or Meatless Grounds
Half of a Bell Pepper (any color)
1/2 cup brussel sprouts
2oz chickpea pasta (measure dry)
1/4cup shredded cheese or non dairy shredded cheese
Salt
Directions:
Set oven to broil.
Cook pasta according to package and set aside.
Spray a medium oven-safe skillet with nonstick cooking oil spray, place over medium-high heat and add veggies to the skillet. Saute veggies until cooked and tender, about 5-7 minutes.
Cook ground turkey until done and no longer pink add to the skillet w the veggies
Stir pasta, cheese, salt and pepper into the skillet mixture.
Transfer skillet to the oven and bake for 1-2 minutes or until cheese has melted.
SNACK
Pear and Cream Cheese Toast
Ingredients:
1 Medium Pear
2 Pieces of Sprouted Bread, Toasted
2tbsp Low Fat Cream Cheese or non dairy spread cheese
Directions:
Toast your bread. Spread on the cream cheese and top with sliced pear
