BREAKFAST
Egg Scramble with Whole Wheat Toast
Ingredients:
2 Whole Eggs
.5 bell pepper (any color)
1 Slice Whole Wheat Toast
Hot Sauce or Salsa
Salt
Pepper
Directions:
Dice the pepper up and add to a warm skillet. Add both eggs. Scramble until the eggs are cooked to your liking. Add to plate and top with hot sauce or salsa.
Toast the whole wheat break and add to the plate.
SNACK
Banana with Almond Butter
Ingredients:
1 Medium Banana
2tbsp Almond Butter
LUNCH
Greek Pita
Ingredients:
1 Whole Wheat Pita
4oz Chicken Breast or Rotisserie Chicken or Seitan
.5cup Cucumber
.25 cup Halved Kalamata Olives
1tbsp Feta Cheese or Non dairy crumble cheese
Directions:
Toast pita.
Cook chicken until done and no longer pink and cut up into pieces. Or cook seitan according to directions
Stuff the Pita with the cooked chicken, diced cucumber, olives, and crumble cheese
SNACK
Cucumber and Hummus
Ingredients:
.5cup Cucumber
2tbsp Hummus
