BREAKFAST
Banana Split Breakfast

Ingredients:

1 Banana

1 C Greek yogurt

1/4 C diced strawberries

1/4 C blueberries

1/4 C Granola

1 tbsp peanut butter or nutella

Directions:

Slice banana in half the long way. Top with yogurt, fruit and granola. 

Melt peanut butter or nutella and drizzle on top.

Carrots and Hard Boiled Egg

Ingredients:

Egg

LUNCH

BIG KID LUNCHABLE

Ingredients:

10 nut thin crackers

2 cheese sticks cut into cubes

1/4 C grapes

1/2 cucumber

4 slices ham or turkey

*You can use a variety of fruits, veggies, cheeses or grains. Choose low-fat cheese and lean meat. If you don't want meat, add an extra protein like some nuts.

SNACK

NO BAKE ENERGY BALLS

Enjoy two balls from the fridge.

DINNER

Zucchini Boats

Ingredients:

1 zucchini

1/4 lb ground turkey

1/2 clove garlic

1/4 onion

1/4 C black beans

1/4 C diced tomatoes

1/4 C corn

1/8 tsp paprika

1/8 tsp chili powder

1/8 tsp cumin

1/4 C shredded mexican cheese

olive oil

salt and pepper to taste

 Directions:

Preheat oven to 350.  Scoop zucchini "guts" out and set aside. Cut zucchini long way and place on baking sheet open side up. Drizzle with olive oil and season with salt and pepper. Bake for 10 minutes.

Heat olive oil in skillet. Add onion and zucchini guts cook for 5 minutes until soft. Add garlic and cook for another minute. Then add ground turkey and cook until no longer pink. Stir in cumin, chili powder, paprika, salt and pepper. Add black beans, tomatoes and corn. Spoon mixture on top of zucchini and top with cheese. Bake for 15 minutes.
