SNACK
Apple and Hard Boiled Egg
Ingredients:
1 Medium Apple
1 Hard Boiled Egg

LUNCH
Roasted Cauliflower Mediterranean Bowl
Ingredients:
2cups Rainbow or Regular Cauliflower, cut into small florets
10oz Chicken Breast, Rotisserie Chicken, or Seitan
1 Medium Bell Pepper, cut into strips
2cups Chickpeas, cooked
2tsp Olive Oil
.33 cup Kalamata Olives
2tbsp Feta Cheese or non dairy crumble cheese
Directions
Preheat oven to 375F
Cook chicken breast until done and no longer pink, cook seitan according to package and set aside
Toss, cauliflower, bell pepper, and chickpeas in a large mixing bowl with olive oil, salt, and pepper. Transfer to a baking sheet and spread out in an even layer.
Bake for 20-25 minutes or until cauliflower and bell peppers are cooked and tender. Divide between two serving bowls with chicken or seitan. Top with Olives and cheese.
Enjoy one portion now and save the other portion for dinner.
