Ingredients:
.5cup Grapes
1 Hard Boiled Egg
LUNCH
Watermelon Caprese Salad
Ingredients:
2cups Watermelon, cubbed
1cup Arugula
.25cup Mozzarella Pearls or .25cup vegan mozzarella
5oz Chicken Breast or Seitan
.5cup Cucumber, copped
Salt
Pepper
1/2 Lemon, juiced
Directions:
Cook chicken breast until done and no longer pink, cook seitan according to package and transfer to a large mixing bowl with remaining ingredients. Toss to combine and transfer to a serving bowl.

Cucumber and Hummus
Ingredients:
.5cup Cucumber
2tbsp Hummus
DINNER
Taco Pizza
Ingredients:
1 Flat Bread
2tbsp Pizza Sauce
4oz Ground Turkey or meatless grounds
.25cup Shredded Mozzarella or non-dairy shredded cheese
.5cup Romain, chopped
.25cup Diced Tomatoes
.25cup Smashed Nacho Cheese Chips
1tbsp Taco Sauce
2tbsp Taco Seasoning
Directions:
Preheat oven to 350F
Cook ground turkey with taco seasoning and until no longer pink
Top the flat bread with pizza sauce, ground turkey, and mozzarella cheese. Cook for 10-12 minutes.
After the Pizza is done top with romain, diced tomatoes, nacho cheese chips, and taco sauce
